- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 medium potatoes, diced
- 2 cups green beans, trimmed and cut into pieces
- 1 can (15 oz) diced tomatoes
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheddar cheese (optional)
Instructions
- Step: Preheat oven to 350°F (175°C).
- Step: In a large skillet over medium heat, brown the ground beef with the chopped onion and minced garlic until the beef is no longer pink. Drain excess fat.
- Step: Add the diced potatoes, green beans, diced tomatoes (with juice), beef broth, Worcestershire sauce, Italian seasoning, salt, and pepper to the skillet. Stir to combine.
- Step: Transfer the mixture to a greased 9×13 inch baking dish. Cover with aluminum foil.
- Step: Bake in the preheated oven for 45 minutes, or until the potatoes are tender.
- Step: If using, remove the foil, sprinkle the shredded cheddar cheese on top, and return to the oven for an additional 10 minutes, or until the cheese is melted and bubbly.
Notes
For a vegetarian option, substitute ground beef with lentils or a meat alternative. You can add other vegetables such as corn or bell peppers for more flavor. This dish is great for meal prep, as it reheats well in the microwave.
