Description

Ingredients

  • 1/2 pound ground turkey (seasoned with Italian herbs)
  • 1/2 pound ground beef
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/3 cup bread crumbs
  • 1/4 cup parmesan cheese (grated)
  • 1 large egg
  • 1 tablespoon olive oil
  • 1/4 medium white onion (diced)
  • 1 large carrot (about 1/2 cup diced)
  • 3 cloves garlic (minced)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 64 ounces low sodium chicken broth
  • 1 cup water
  • 3/4 cup acini de pepe pasta
  • 2 cups spinach (chopped)

Instructions

  1. Mix Meatballs: In a large bowl, combine meat, Italian seasoning, salt, pepper, bread crumbs, parmesan, and egg. Mix until just combined and roll into small meatballs.
  2. Brown Meatballs: Heat olive oil in a pot over medium-high heat. Brown meatballs in batches for about 4 minutes each and set aside on a paper towel-lined plate.
  3. Sauté Vegetables: Add diced onion and carrot to the same pot and cook for 3 minutes to soften. Add garlic, salt, and pepper; cook for 1-2 minutes.
  4. Simmer Soup: Pour in chicken broth and water, bringing the mixture to a boil. Reduce to a simmer, add the meatballs, and cook for 2-3 minutes.
  5. Cook Pasta: Add the pasta to the pot and simmer for 9-10 minutes until tender.
  6. Finish: Stir in the chopped spinach and cook for about 1 minute until wilted before serving.

Notes

It is normal for the pasta in this soup to soak up quite a bit of the broth when stored in the refrigerator. Add more water or broth when reheating until you have the desired consistency.
