Ingredients

- 1 yellow onion (2 cups diced)
- 2 carrots (1 cup diced)
- 1–2 celery ribs (3/4–1 cup diced)
- 3–4 cloves garlic
- 2 TBSP olive oil
- 1 TBSP butter
- 2 tsp Italian seasoning blend
- 1/4–1/2 tsp salt
- 1/4 tsp black pepper
- 4–5 cups vegetable broth
- 2 cans white beans (14.5/15 oz each)
- 1 parmesan cheese rind (optional)
- 1/2 cup freshly grated parmesan cheese
- Fresh rosemary and/or parsley
Instructions
- Prep: Peel, trim, and dice vegetables and mince garlic.
- Organize: Measure out ingredients and drain and rinse the beans.
- Sauté: Heat olive oil and butter in a large pot over medium-high heat; sauté onions, celery, and carrots until tender.
- Season: Add garlic, Italian seasoning, salt, and pepper; sauté for about one minute.
- Combine: Stir in broth, beans, and the optional parmesan rind.
- Simmer: Bring to a boil, then reduce to a low simmer and cook for about 15 minutes until vegetables are tender.
- Finalize: Remove and discard the parmesan rind.
- Adjust: Taste and add any additional herbs or spices as desired.
- Serve: Top with grated parmesan cheese and fresh herbs.
Notes
Leftovers can be stored in airtight containers in the fridge or frozen. For a thicker, creamier consistency, use an immersion blender once the soup is cooked.
