- 16 ounce brown lentils
- 1 small onion, finely chopped
- 2 carrots, peeled and finely chopped
- 2 stalks celery, diced
- 1 can (15 oz) diced roasted tomatoes
- 6 cups vegetable broth
- 1 teaspoon minced garlic
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon fresh parsley
Instructions
- Step: Add 16 ounces brown lentils, 1 finely chopped small onion, 2 peeled and finely chopped carrots, 2 diced celery stalks, 1 can diced roasted tomatoes, 6 cups vegetable broth, 1 teaspoon minced garlic, 1 teaspoon salt, and 1 teaspoon black pepper to the crock pot.
- Step: Stir the ingredients together until well combined.
- Step: Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until the lentils are tender.
- Step: About 15 to 30 minutes before serving, stir in 1 tablespoon fresh parsley.
- Step: Serve warm.
Notes
Refrigerate the leftovers in an air tight container for up to 3-4 days. If the soup is too thick, add extra broth to reach desired consistency.
