Description

A flavorful Cajun shrimp and rice skillet that is perfect for any season. This easy one-pot meal features jumbo shrimp seasoned to perfection, served over a bed of fluffy rice, bell peppers, and onions.


Ingredients

  • 1 lb jumbo shrimp
  • 1 1/3 cups long grain rice
  • 2 2/3 cups chicken broth
  • 1/4 cup onion, chopped
  • 1/4 cup red pepper, chopped
  • 1/4 cup green pepper, chopped
  • 4 tablespoons butter
  • 1 teaspoon garlic, chopped
  • 1 tablespoon Cajun seasoning
  • 1/2 tablespoon onion powder
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon paprika
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Step: Combine Cajun seasoning, onion powder, garlic powder, paprika, and black pepper in a small bowl and set aside.
  2. Step: Place a skillet or pot on medium-high heat and add the butter.
  3. Step: Once the butter is melted, add the garlic, chopped red pepper, green pepper, and onions.
  4. Step: Stir in the rice and cook for about 2 minutes.
  5. Step: Add half of the prepared seasoning mixture to the rice and mix well.
  6. Step: Pour in the chicken broth and stir.
  7. Step: Cover the pan and allow to simmer for 15 minutes.
  8. Step: While the rice simmers, place shrimp in a bowl, drizzle with olive oil, and coat generously with the remaining seasoning mixture.
  9. Step: Uncover the pot, add the seasoned shrimp, and simmer for another 5 to 7 minutes.
  10. Step: Mix everything together, taste, and add more seasoning if desired before serving.

Notes

You can use any variety of rice for this dish; just ensure it is rinsed thoroughly before cooking. Store leftovers in an airtight container in the refrigerator for up to 2 days.
