Description

Instant Pot Ranch Chicken with tender potatoes, carrots, and mushrooms in a creamy Ranch gravy. This easy one-pot meal is ready to serve in about 40 minutes.


Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 pounds boneless skinless chicken breasts, regular thickness
  • 1 teaspoon Italian seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 8 ounces mushrooms, stemmed and quartered
  • 1 teaspoon minced garlic
  • 2 cups low sodium chicken broth
  • 1 ½ pounds creamer potatoes
  • 8 ounces baby carrots
  • ½ cup heavy cream
  • 2 tablespoons dry Ranch seasoning
  • 2 tablespoons cornstarch
  • 2 to 3 tablespoons chopped fresh Italian parsley, divided

Instructions

  1. Step: Cut the chicken breasts in half and season both sides with salt, pepper, and Italian seasoning.
  2. Step: Press SAUTE on the Instant Pot, add oil, and cook chicken for 3 to 4 minutes per side until golden brown; transfer to a plate.
  3. Step: Add butter to the pot, then sauté mushrooms and garlic for 2 minutes; stir in chicken broth and scrape the bottom of the pot.
  4. Step: Return chicken to the pot, place potatoes and carrots on top, seal the lid, and pressure cook on HIGH for 10 minutes.
  5. Step: Perform a quick release of steam and use a slotted spoon to transfer chicken and vegetables to a bowl.
  6. Step: Whisk heavy cream, Ranch seasoning, and cornstarch in a small bowl.
  7. Step: Press SAUTE and whisk the cream mixture into the sauce until thickened; stir in 2 tablespoons parsley.
  8. Step: Return chicken and vegetables to the pot, stir to coat with gravy, garnish with remaining parsley, and serve.

Notes

Use regular thickness chicken breasts rather than thin-sliced to prevent overcooking. If using regular potatoes or carrots, cut them into small, even-sized chunks.
