Easy and comforting Stuffed Peppers filled with savory ground meat, rice, and zesty tomato sauce, perfect for family dinners.
Ingredients

- ¾ cup uncooked brown rice (or 1 ½ cups cooked)
- 6 bell peppers
- 2 tsps olive oil
- ¾ cup finely chopped yellow onion
- 1 lb ground beef (or ground turkey)
- 3 cloves garlic, minced
- 15 oz canned diced tomatoes
- 8 oz canned tomato sauce
- 2 tsps Italian seasoning
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp pepper
- 1 cup shredded mozzarella cheese (divided)
Instructions
- Prepare Rice: Cook the brown rice according to package directions and set aside to cool.
- Preheat: Set your oven to 400°F.
- Prep Peppers: Cut the tops off the bell peppers and remove the seeds and membranes.
- Sauté: Heat olive oil in a large skillet over medium heat and cook onions until softened, about 2-3 minutes.
- Brown Meat: Add ground beef or turkey to the skillet, crumbling as it cooks until browned. Drain grease and stir in minced garlic for 30 seconds.
- Simmer: Stir in diced tomatoes, tomato sauce, Italian seasoning, garlic powder, salt, and pepper. Simmer on low for 5 minutes.
- Combine: Remove from heat and fold in the cooked rice and half of the shredded cheese.
- Stuff: Pour ½ cup of water into a baking dish. Fill each pepper with the meat and rice mixture and top with remaining cheese.
- Bake: Cover the dish with foil sprayed with cooking spray. Bake for 30 minutes, then uncover and bake for 5 additional minutes.
Notes
Consider mixing in chopped spinach or zucchini into the filling for added nutrition.
