Description

This baked boneless chicken thighs recipe is the best way to oven-bake chicken! The chicken thighs are marinated in a creamy sauce that tenderizes the chicken to a juicy perfection. The entire cooking process takes only ten minutes of hands-on time, with the rest being done in the oven.


Ingredients

  • 3 lbs chicken thighs (boneless & skinless)
  • 1/4 cup mayonnaise
  • 1 Tbsp olive oil
  • 4 garlic cloves, minced
  • 2 tsp salt
  • ¼ tsp ground pepper
  • ½ tsp chili powder
  • 1 tsp ground paprika

Instructions

  1. Step: Trim off any excess fat from the chicken thighs and discard it.
  2. Step: In a bowl, whisk together mayo, oil, and minced garlic.
  3. Step: Add the chicken thighs to a large bowl and coat with the mayo mixture.
  4. Step: Season the chicken on all sides with salt, pepper, chili powder, and paprika, and give everything a good mix.
  5. Step: Allow the chicken to marinate for 3-4 hours in the fridge, or overnight.
  6. Step: Transfer the chicken into a baking dish, in a single layer.
  7. Step: Bake at 400°F for 35-45 minutes, or until the chicken is crisp and golden brown.
  8. Step: Allow the chicken to rest for a few minutes before serving.

Notes

For the best flavor, marinade the chicken for 3-4 hours or up to overnight. If short on time, 30 minutes will suffice. Ensure the internal temperature reaches 165°F. Store leftovers in the fridge for up to 3 days.
