Made with bright and zesty lemon, punchy garlic and a few herbs and spices.
Ingredients

- 1/2 cup extra-virgin olive oil
- 1/3 cup lemon juice
- 1 tablespoon fresh lemon zest
- 6 large garlic cloves, minced
- 2 teaspoons dried oregano
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1 1/2 teaspoons sea salt
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon ground nutmeg
- 2–3 pounds boneless, skinless chicken thighs
Instructions
- Step: Whisk together all of the ingredients (except chicken) in a large bowl or zip-lock bag until combined.
- Step: Add the chicken and mix until fully coated in marinade.
- Step: Let marinate for at least 30 minutes and up to 6 hours, placing in the fridge if marinating longer than 30 minutes.
- Step: Remove chicken from the fridge 20-30 minutes before cooking to let it reach room temperature.
- Step: Warm a large skillet or cast iron pan over medium-high heat with enough cooking oil to lightly coat the pan.
- Step: Add the chicken and cook undisturbed for 8-10 minutes.
- Step: Flip each thigh and cook for another 10-12 minutes or until the internal temperature reaches 165°F/74°C.
- Step: Remove from the pan and let the chicken rest for a few minutes before serving.
Notes
For richer flavor in dark meat, aim for an internal temperature of 195°F/90°C. This recipe can also be baked at 400°F/200°C: boneless thighs for 30-35 minutes, bone-in thighs for 45-50 minutes, or breasts for 20-25 minutes.
