Made with bright and zesty lemon, punchy garlic, and a blend of aromatic herbs and spices, this Greek-inspired chicken is perfect for a quick, flavorful meal.

- 1/2 cup extra-virgin olive oil
- 1/3 cup lemon juice
- 1 tablespoon fresh lemon zest
- 6 large garlic cloves, minced
- 2 teaspoons dried oregano
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1 1/2 teaspoons sea salt
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon ground nutmeg
- 2–3 pounds boneless, skinless chicken thighs
Instructions
- Step: Whisk together all ingredients except the chicken in a large bowl or zip-lock bag.
- Step: Add the chicken and mix until fully coated, then marinate for at least 30 minutes and up to 6 hours in the refrigerator.
- Step: Remove the chicken from the refrigerator 20-30 minutes before cooking to reach room temperature.
- Step: Warm a large skillet or cast iron pan over medium-high heat with enough oil to lightly coat the bottom.
- Step: Add the chicken to the pan and cook undisturbed for 8-10 minutes.
- Step: Flip the thighs and cook for another 10-12 minutes or until the internal temperature reaches 165°F (74°C).
- Step: Remove from the pan, let rest for a few minutes, and serve with fresh herbs and lemon wedges.
Notes
Internal temperature of 165°F (74°C) is the minimum for safety, but aiming for 195°F (90°C) provides a richer texture for dark meat. Leftovers keep in an airtight container in the refrigerator for up to 3 days.
