  • 80g (0.67 cup) Almond Flour, for nutty flavor
  • 30g (0.25 cup) Toasted Almond Flour, for glaze flavor
  • 100g (7 Tbsp) Cold Unsalted Butter, Cubed, for crumbly texture
  • 80g (0.33 cup) Brown Sugar, for moisture and caramel flavor
  • 0.5 tsp Salt, enhances sweetness
  • 200g (1 cup) Granulated Sugar, for sweetness
  • 3 Large Eggs + 1 Egg Yolk, for richness and binding
  • 120ml (0.5 cup) Fresh Lemon Juice, for zesty flavor
  • Zest of 2 Lemons, for intense lemon flavor
  • 30g (2 Tbsp) Cornstarch, for thickening
  • 30g (2 Tbsp) Unsalted Butter, Melted, for filling richness
  • 80ml (0.33 cup) Honey, for glaze sweetness
  • Pinch of Salt, balances glaze
  • 2 Tbsp Sliced Toasted Almonds, for garnish
  • Extra Lemon Zest, for garnish

Instructions

  1. Prepare Oven & Pan: Preheat to 180°C (350°F) and line a 20x30cm (8x12in) pan with parchment.
  2. Make Crumble Base: Combine oats, flours, brown sugar, and salt in a bowl.
  3. Incorporate Butter: Rub cold butter into dry ingredients until crumbly.
  4. Press Base: Press two-thirds of the crumble into the pan.
  5. Prepare Lemon Filling: Whisk sugar, eggs, lemon juice, zest, and cornstarch.
  6. Add Butter to Filling: Stir in melted butter.
  7. Bake: Pour filling over base and bake 20-25 minutes, until set.
  8. Make Glaze: Combine honey, almond flour, lemon juice, and salt.
  9. Heat Glaze: Heat glaze over low heat until glossy.
  10. Glaze & Garnish: Drizzle glaze over bars, sprinkle with almonds and zest.
  11. Cool & Cut: Cool completely before cutting.

Notes

Toasting almonds intensifies their flavor. Use fresh lemon juice for the best results.
