- 30g (0.25 cup) Toasted Almond Flour, for glaze flavor
- 100g (7 Tbsp) Cold Unsalted Butter, Cubed, for crumbly texture
- 80g (0.33 cup) Brown Sugar, for moisture and caramel flavor
- 0.5 tsp Salt, enhances sweetness
- 200g (1 cup) Granulated Sugar, for sweetness
- 3 Large Eggs + 1 Egg Yolk, for richness and binding
- 120ml (0.5 cup) Fresh Lemon Juice, for zesty flavor
- Zest of 2 Lemons, for intense lemon flavor
- 30g (2 Tbsp) Cornstarch, for thickening
- 30g (2 Tbsp) Unsalted Butter, Melted, for filling richness
- 80ml (0.33 cup) Honey, for glaze sweetness
- Pinch of Salt, balances glaze
- 2 Tbsp Sliced Toasted Almonds, for garnish
- Extra Lemon Zest, for garnish
Instructions
- Prepare Oven & Pan: Preheat to 180°C (350°F) and line a 20x30cm (8x12in) pan with parchment.
- Make Crumble Base: Combine oats, flours, brown sugar, and salt in a bowl.
- Incorporate Butter: Rub cold butter into dry ingredients until crumbly.
- Press Base: Press two-thirds of the crumble into the pan.
- Prepare Lemon Filling: Whisk sugar, eggs, lemon juice, zest, and cornstarch.
- Add Butter to Filling: Stir in melted butter.
- Bake: Pour filling over base and bake 20-25 minutes, until set.
- Make Glaze: Combine honey, almond flour, lemon juice, and salt.
- Heat Glaze: Heat glaze over low heat until glossy.
- Glaze & Garnish: Drizzle glaze over bars, sprinkle with almonds and zest.
- Cool & Cut: Cool completely before cutting.
Notes
Toasting almonds intensifies their flavor. Use fresh lemon juice for the best results.
