Description
A light and filling keto-friendly soup featuring savory turkey meatballs instead of traditional wonton wrappers to keep the carb count low.
Ingredients

- 1 pound ground turkey
- 1/4 cup green onions, chopped
- 2 tsp minced garlic
- 2 tbsp soy sauce
- 1 egg
- 4 cups chicken broth
- 2 tsp sesame oil
- 8 ounces mushrooms, sliced
- 1 tsp chili garlic sauce
- 1 tbsp soy sauce
- 4 cups bok choy, chopped
Instructions
- Step: Place all of the ingredients for the meatballs into a large mixing bowl, and knead with your hands until well combined. Form the mixture into 20 small meatballs.
- Step: Add the sesame oil and mushrooms to a saucepan over medium heat on the stove. Saute for 1-2 minutes.
- Step: Pour the chicken broth into the saucepan and add the soy sauce and chili garlic sauce as well.
- Step: Bring the mixture to a low boil and add the meatballs in, adding a little water if needed to make sure the meatballs are fully covered.
- Step: Continue to cook until the meatballs begin to float and are cooked through.
- Step: Add the bok choy to the saucepan and submerge it. Simmer the soup until the bok choy is tender. Serve the soup.

This soup is perfect for meal prep and can be stored in the refrigerator for up to 5 days.
