Description

This Mexican chicken marinade uses lime juice, spices, and cilantro for juicy, flavorful chicken. Perfect for tacos, bowls, and meal prep.


Ingredients

  • ¼ cup olive oil
  • ¼ cup chopped cilantro
  • 2 tablespoons lime juice
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried Mexican oregano
  • 1 teaspoon kosher salt
  • ½ teaspoon smoked paprika
  • ½ teaspoon ancho chili powder
  • 3 pounds chicken breasts, thighs, drumsticks, or tenderloins

Instructions

  1. Step 1: Add all the ingredients to a large Ziploc bag or a baking dish and toss to combine.
  2. Step 2: Seal the bag or cover the baking dish with plastic wrap and refrigerate for 2 to 10 hours.
  3. Step 3: Remove the chicken from the marinade and grill or cook it until the internal temperature reaches 165°F on an instant-read thermometer.

Notes

For thicker or uneven chicken breasts, butterfly the chicken or pound it with a meat mallet to an even thickness before marinating. Let the chicken come to room temperature 20-30 minutes before cooking for more even results.
