Ingredients

- ¼ cup olive oil
- ¼ cup chopped cilantro
- 2 tablespoons lime juice
- 3 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried Mexican oregano
- 1 teaspoon kosher salt
- ½ teaspoon smoked paprika
- ½ teaspoon ancho chili powder
- 3 pounds chicken breasts, thighs, drumsticks, or tenderloins
Instructions
- Step 1: Add all the ingredients to a large Ziploc bag or a baking dish and toss to combine.
- Step 2: Seal the bag or cover the baking dish with plastic wrap and refrigerate for 2 to 10 hours.
- Step 3: Remove the chicken from the marinade and grill or cook it until the internal temperature reaches 165°F on an instant-read thermometer.
Notes
For thicker or uneven chicken breasts, butterfly the chicken or pound it with a meat mallet to an even thickness before marinating. Let the chicken come to room temperature 20-30 minutes before cooking for more even results.
