- 2 medium/large sweet potatoes, cubed
- 2 teaspoons olive or avocado oil
- ½ teaspoon sea salt
- ½ teaspoon garlic powder
- ⅛ teaspoon black pepper
- 1 pound lean ground beef
- 2–3 tablespoons taco seasoning
- 2 tablespoons water
- 1 cup cottage cheese
- 1 whole avocado, chopped
- 4 teaspoons hot honey
- hot sauce, pickled onions, and/or hot and sweet jalapeños (optional)
Instructions
- Step 1: Preheat your oven to 400°F. Toss the cubed sweet potatoes with olive oil, sea salt, garlic powder, and black pepper in a mixing bowl. Spread the sweet potato cubes in a single layer on a baking sheet. Roast for about 20 minutes, flipping halfway through, until they are tender and slightly crispy.
- Step 2: Heat a skillet over medium-high heat. Add the lean ground beef to the skillet, breaking it up with a spatula. Cook until it’s browned and fully cooked, which should take about 6-7 minutes. If your beef seems dry, add a little water and mix in the taco seasoning to ensure the meat is moist and flavorful.
- Step 3: Divide the roasted sweet potatoes between four bowls. Top each bowl with the cooked ground beef. Then, add a generous scoop of cottage cheese to each bowl, followed by chopped avocado. Drizzle hot honey over the toppings and finish with hot sauce or pickled onions for an extra kick.
Notes
For best results, cut sweet potatoes evenly and taste beef mixture before serving. Feel free to experiment with toppings and make it your own.
