- 1 pound red potatoes, quartered

- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning

Instructions
- Preheat: Preheat oven to 400°F and lightly grease a large baking sheet (use a rimmed pan to catch juices).
