- 1 cup Baby Carrots

- 2 tablespoons Olive Oil
- 1/4 cup Fresh Parsley or Green Onions
Instructions
- Step 1: Preheat your oven to 400°F (200°C).
- Step 2: In a large mixing bowl, combine sliced beef kielbasa, bell peppers, baby carrots, and baby potatoes.
- Step 3: Add olive oil, honey, minced garlic, and soy sauce; toss to coat.
- Step 4: Line a large baking sheet with parchment paper and spread the seasoned mixture out in an even layer.
- Step 5: Roast in the oven for 20-25 minutes, stirring halfway through, until golden-brown and fork-tender.
- Step 6: Remove from oven and garnish with freshly chopped parsley or green onions; serve hot.
