Description

A comforting one-pan meal that combines succulent baked chicken legs with flavorful rice, allowing the rice to absorb all the savory juices for a satisfying and hearty dinner.

Ingredients

Scale
  • 8 chicken legs (drumsticks)
  • 2 cups long-grain rice
  • 4 cups chicken broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh herbs (like parsley or thyme) for garnish (optional)

Instructions

  1. Preheat Oven: Begin by preheating your oven to 400°F (200°C).
  2. Prepare Chicken: Pat each chicken leg dry with a paper towel.
  3. Season Chicken: In a bowl, mix paprika, garlic powder, onion powder, salt, and pepper. Rub this seasoning blend generously over the chicken legs.
  4. Sauté Onions and Garlic: Heat olive oil in a large oven-safe skillet over medium heat. Add chopped onions and sauté until they become translucent. Incorporate minced garlic and cook for an additional 1-2 minutes.
  5. Add Rice: Stir in the rice, coating it well with the mixture of onion and garlic.
  6. Add Broth: Pour in the chicken broth (or water) and bring to a simmer.
  7. Nestle Chicken: Carefully nestle the seasoned chicken legs into the rice mixture, ensuring they’re partially submerged in the broth.
  8. Bake: Cover the skillet with a tight-fitting lid or aluminum foil. Place in the preheated oven and bake for 45-50 minutes, or until the chicken is cooked through and the rice is tender.
  9. Baste (Optional): Halfway through baking, you can carefully baste the chicken legs with the cooking liquid for enhanced flavor.
  10. Garnish and Serve: After baking, remove from the oven. Let it rest for a few minutes before serving. Garnish with fresh herbs if desired.

Notes

For a different aroma, jasmine or basmati rice can be used. To add more nutrition, consider adding bell peppers, peas, or carrots to the rice mixture.
