Description
Creamy garlic Parmesan pasta is a quick 20 minute meal. With its super creamy consistency it features gourmet garlic-infused flavor, but comes together quickly and easily in a single pot on the stovetop.
Ingredients
Scale
- 2 tsp olive oil
- 4 cloves garlic, minced
- 2 tbsp butter
- ¼ tsp salt
- ½ tsp pepper
- 3 cups chicken stock
- ½ lb linguini pasta
- 1 cup grated Parmesan cheese
- ¾ cup half & half
- 2 tbsp chopped fresh parsley (or 2 tsp dried)
- 1 tsp chopped fresh basil (optional)
Instructions
- Step: In a pot, heat the olive oil over medium-low heat. Add the garlic and stir, allowing it to cook for 1-2 minutes, just until fragrant but not bitter or burnt.
- Step: Add the butter, stirring just until melted. Add the salt, pepper and chicken stock. Raise the heat to high and let the mixture come to a boil.
- Step: Once it’s boiling add the pasta, stir well, and cook per the package instructions for ‘al dente’.
- Step: Reduce the heat back to medium low, add the cheese, stirring until completely melted and smooth.
- Step: Remove the pot from heat, add the half and half and parsley, and stir until evenly incorporated into a thick and creamy sauce.
- Step: Serve warm with fresh basil for garnish (if desired), and enjoy!
Notes
Use grated Parmesan cheese, not shredded. Use half & half for the correct consistency; do not substitute with milk or heavy cream. For added protein, you can add leftover chopped rotisserie chicken.
