Description

Ingredients

  • 4 cloves garlic, minced
  • 2 tablespoons fresh ginger, grated
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 medium yellow onion, diced
  • 1 cup shredded carrots
  • 4 cups green cabbage, thinly sliced
  • 1/2 cup green onions, chopped
  • 6 cups chicken broth
  • 1 tablespoon rice vinegar
  • Salt and pepper, to taste
  • 2 beaten eggs
  • Red pepper flakes or sriracha, optional

Instructions

  1. Step 1: Brown the ground turkey in a large soup pot over medium-high heat until no longer pink, then drain excess fat.
  2. Step 2: Add diced onion, garlic, and ginger to the pot and sauté for 3–4 minutes until fragrant.
  3. Step 3: Stir in soy sauce, sesame oil, and rice vinegar, then pour in the chicken broth and bring to a boil.
  4. Step 4: Add carrots and cabbage, reduce heat to medium-low, and simmer for 15 minutes; stir in half of the green onions.
  5. Step 5: Slowly drizzle in the beaten eggs while stirring in a circular motion to create ribbons.
  6. Step 6: Adjust seasonings and serve topped with remaining green onions and optional sriracha.

Notes

For a low-carb option, serve as is or over cauliflower rice. To make in a slow cooker, brown the meat first, then cook on low for 6–7 hours or high for 3–4 hours, adding eggs at the end.
