This easy soup has a rich tomato broth. It’s your favorite casserole in soup form! The perfect comfort food.
Ingredients

- 1 pound ground beef
- 1 yellow onion, diced
- 4 cloves garlic, minced
- 1 (24 oz.) jar spaghetti sauce
- 8 oz. mushrooms, sliced
- 1 tsp Italian seasoning
- 1 (14.5 oz.) can fire roasted tomatoes
- 1 1/2 cups water
- 1 (14.5 oz.) can beef broth
- 1 cup mini uncooked lasagna noodles
- 1 cup ricotta cheese
Instructions
- Step: Brown the ground beef in a large pot, drain excess fat.
- Step: Add the Italian seasoning, sliced mushrooms, and diced onions. Saute for 10 minutes.
- Step: Add the garlic and saute for another minute until fragrant.
- Step: Add the water, spaghetti sauce, fire roasted tomatoes, and beef broth. Stir well to combine.
- Step: Increase heat to bring to a boil, then cover loosely and simmer for 30 minutes.
- Step: Add the pasta and cook uncovered until al dente.
- Step: Remove from heat and stir in the ricotta cheese.
Notes
Store leftovers in an airtight container in the refrigerator for up to four days or freeze for up to three months. This soup tastes even better when made the day before.
