Description
Zesty, herbaceous pan-seared jumbo shrimp with a vibrant green herb sauce made from parsley, garlic, oregano, red wine vinegar, and olive oil.

- 1/2 cup Parsley, finely chopped
- 4 cloves Garlic, finely minced
- 1 Fresno pepper, seeded and finely minced
- 1 tsp dried Oregano
- 1/2 cup Extra virgin olive oil
- 3 tbsp Red wine vinegar
- 1 tsp Salt
- 1/2 tsp Fresh ground pepper
- 1 lb jumbo Shrimp, peeled and deveined
- 3 tbsp Olive oil
- 2 cloves Garlic, finely minced
- 2 tbsp Honey
- 1 tsp Smoked paprika
- 1 tsp Salt
- 1/2 tsp Fresh ground pepper
Instructions
- Step 1: Finely chop parsley, garlic, and red chili pepper by hand. Place ingredients in a medium size bowl and add oregano, salt, and pepper.
- Step 2: Add olive oil and red wine vinegar to the herb mixture. Stir to combine and allow the sauce to stand for at least 1 hour.
- Step 3: Peel and devein shrimp. Add olive oil, garlic, honey, smoked paprika, salt, and pepper, then toss to coat. Marinate in the refrigerator for 20 minutes.
- Step 4: Heat a sauce pan or grill pan over high heat. Add the marinated shrimp in a single layer and cook for 2-3 minutes per side.
- Step 5: Transfer cooked shrimp to a serving dish. Spoon about 1/4 cup of sauce over the shrimp and toss to coat. Serve the remaining sauce in a small bowl on the side.
Notes
Avoid using a food processor to maintain an authentic texture; chop ingredients by hand. Allow the chimichurri sauce to sit for 1-2 hours or overnight for the most intense flavor.
