Instructions

  1. Make Dry Caramel: Heat granulated sugar in a medium heavy-bottomed saucepan over medium heat. Swirl occasionally as the sugar melts and caramelizes to a deep amber color. Do not stir.
  2. Dissolve Caramel: Carefully pour 1/2 cup of water into the hot caramel. Stir over medium-low heat until the hardened caramel dissolves completely.
  3. Simmer Pears and Spices: Add the diced pear, brown sugar, cinnamon sticks, ginger, and cardamom pods. Simmer gently for 15-20 minutes until the pear pieces are very tender.
  4. Blend Syrup Smooth: Remove the cinnamon sticks and cardamom pods. Use an immersion blender (or carefully transfer to a standard blender) to blend the syrup until completely smooth.
  5. Thicken with Slurry: Whisk the remaining 1/4 cup water with cornstarch to create a smooth slurry. Pour the slurry into the simmering syrup, whisking constantly for 1-2 minutes until glossy and thickened.
  6. Finish with Butter and Vanilla: Remove the saucepan from the heat. Stir in the unsalted butter and vanilla extract until fully incorporated.
  7. Store and Serve: Transfer the finished syrup to a heatproof container. Store in the refrigerator for up to 2 weeks. Reheat gently before serving over pancakes or waffles.

To avoid a grainy texture, resist stirring the sugar as it caramelizes initially; swirl the pan instead.
