Description

This quick + simple peach feta salad recipe is made with cherry tomatoes, shallots, fresh basil, and mint. The flavours are a perfect marriage of sweet, juicy, salty, and acidic – every bite tastes just like summer!


Ingredients

Scale
  • 3 large peaches, pits removed + cut into 68 wedges per fruit
  • 1 pint cherry tomatoes, halved
  • Half a small shallot, peeled + sliced thinly
  • 1/2 cup microbial-rennet feta cheese, crumbled
  • 10 large leaves fresh basil, chopped
  • 10 large leaves fresh mint, chopped
  • 2 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • 1/2 a lemon, juice
  • 1 tsp honey
  • 1/2 tsp garlic powder
  • Salt + pepper, to taste

Instructions

  1. Step 1: Add all salad dressing ingredients to a small bowl OR a glass jar with a lid. Whisk or shake together until well-combined. Set aside.
  2. Step 2: Add sliced peaches, cherry tomatoes, shallots, feta, basil, and mint to a large bowl.
  3. Step 3: Pour dressing overtop of salad and toss ingredients until coated in the dressing. Season with salt + pepper, as desired.
  4. Step 4: You may serve the salad immediately, or allow it to chill in the fridge for 30 minutes. Enjoy!

Notes

Leftovers keep for up to one day in the fridge. You may use ripe nectarines instead of peaches or white wine vinegar instead of red wine vinegar.
