Instructions

  1. Prep the Pastry: On a lightly floured surface, gently unroll one sheet of thawed puff pastry (about 9×9 inches / 23×23 cm).
  2. Add the Cheese: Sprinkle an even layer of shredded cheese (about 0.5 cup / 50g) over half of the pastry sheet, leaving a small 0.5-inch (1 cm) border.
  3. Fold and Seal: Fold the other half of the pastry over the cheese, carefully aligning the edges. Lightly press down to seal the edges, creating a cheese sandwich.
  4. Cut into Bites: Use a sharp knife or a pizza cutter to cut the pastry into small squares or strips (about 1.5 x 1.5 inches / 4×4 cm). If the cheese begins to ooze out as you cut, briefly chill the pastry for 10 minutes to firm it up.
  5. Egg Wash and Season: Place the bites on a parchment-lined baking sheet, leaving an inch between each. Brush lightly with beaten egg and sprinkle with optional seeds or herbs.
  6. Bake to Golden: Bake in a preheated oven (400F / 200C) for 15-20 minutes, or until puffed, golden brown, and the cheese is bubbly and melting.
