Description
Easy Ground Beef Enchiladas are a fantastic way to enjoy a Mexican classic without spending hours in the kitchen. These enchiladas combine flavorful ground beef with zesty spices, all wrapped in soft tortillas and smothered in rich, savory sauce.
Ingredients
Scale
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- 8 corn tortillas
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 can (10 oz) red enchilada sauce
- Fresh cilantro, for garnish (optional)
- Sour cream, for serving (optional)
Instructions
- Preheat: Preheat your oven to 350°F (175°C).
- Cook the Beef: In a large skillet, brown the ground beef over medium heat. Add the diced onion and minced garlic, cooking until the onion is translucent.
- Season: Stir in the cumin, chili powder, salt, and black pepper. Cook for an additional 2-3 minutes, allowing the spices to blend.
- Prepare Tortillas: Warm the corn tortillas in a dry skillet or microwave for a few seconds until pliable.
- Assemble Enchiladas: Spread a little enchilada sauce on the bottom of a baking dish. Take a tortilla, fill it with the beef mixture and a sprinkle of cheese, then roll it up and place it seam-side down in the dish. Repeat with the remaining tortillas.
- Top with Sauce and Cheese: Once all enchiladas are in the dish, pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
- Bake: Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
- Garnish: Remove from the oven and let cool for a few minutes. Garnish with chopped cilantro if desired.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days. You can freeze assembled but unbaked enchiladas for up to 3 months by wrapping the baking dish tightly with plastic wrap and aluminum foil.
