Ingredients

  • 1 1/4 pounds boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons all-purpose flour
  • 2 teaspoons Italian seasoning
  • 1 teaspoon onion powder
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • 1/4 cup unsalted butter, divided
  • 45 cloves fresh garlic, minced
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Step 1: Cut the chicken and pat dry with paper towels. Add to a bowl with the flour, Italian seasoning, onion powder, red pepper flakes, salt, and pepper. Toss until the meat is well coated, and set aside.
  2. Step 2: Warm the oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the chicken pieces in a single layer, leaving some space between each (work in batches, if needed).
  3. Step 3: Cook until the meat is golden brown on the bottom, about 3 minutes. Flip the chicken and cook for 2 minutes longer.
  4. Step 4: Add the remaining butter, garlic, and parsley. Stir well and cook for 1-2 more minutes or until the chicken reaches 165°F internally.
  5. Step 5: Season to taste with additional salt and pepper if needed. Serve the garlic butter chicken bites hot.

Notes

Dry the chicken with paper towels before seasoning to help the flour coating stick better and promote browning. Avoid overcrowding the skillet so the chicken browns and crisps rather than steams.
