- 1 tbsp Olive Oil
- 1 lb Ground Turkey (93/7 lean recommended)
- 1 small Yellow Onion (finely diced)
- 8 oz Cremini Mushrooms (sliced)
- 3 cloves Garlic (minced)
- 5 oz Fresh Baby Spinach
- 1 tsp Italian Seasoning
- 1/4 tsp Red Pepper Flakes (optional)
- 1/2 tsp Salt (or to taste)
- 1/4 tsp Black Pepper (or to taste)
Instructions
- Step 1: Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up, until browned. Drain excess fat and set aside.
- Step 2: In the same skillet, add diced onion and cook until softened (3-4 mins). Add sliced mushrooms and cook until browned. Stir in minced garlic and optional red pepper flakes; cook for 1 minute until fragrant.
- Step 3: Return turkey to the skillet. Add fresh spinach in handfuls, stirring until it wilts. Season with Italian seasoning, salt, and pepper.
- Step 4: Stir everything together until well combined. Simmer for 2-3 minutes to let flavors meld. Serve hot.
Notes
Don’t overcrowd the pan when cooking the mushrooms to ensure they brown properly. For a creamy version, stir in 2 oz of cream cheese at the end until melted and smooth. This dish is excellent for meal prep; store in airtight containers for up to 4 days.
