A rich and flavorful homemade tomato soup made with roasted fresh tomatoes, onions, and garlic, blended with fresh basil for a smooth, creamy, and irresistible texture.

- 3 pounds fresh tomatoes, cut into 2” pieces
- ½ onion, diced (1 cup)
- 5 cloves garlic, peeled and chopped
- 2 Tablespoons olive oil
- ½ teaspoon fine sea salt
- ¼ teaspoon freshly ground black pepper
- ¼ cup fresh basil
- 2 Tablespoons salted butter
- 2 Tablespoons all-purpose flour
- 1 Tablespoon granulated sugar
- 1 quart vegetable broth
- ¼ to ½ cup heavy cream (optional)
Instructions
- Preheat: Preheat oven to 450 degrees Fahrenheit (232 degrees Celsius) and lightly grease a large baking sheet.
- Roast: Mix tomatoes, onion, garlic, olive oil, salt, and pepper in a bowl, spread in a single layer on the baking sheet, and roast for 15 minutes.
- Finish Roasting: Stir the ingredients and roast for an additional 15 minutes, then broil for the last 2-3 minutes until lightly charred.
- Blend: Transfer the roasted mixture to a high-powered blender, add fresh basil, and blend on high speed until silky smooth.
- Make Roux: Melt butter in a large pot over medium-high heat, whisk in flour, and cook for 30 to 60 seconds until bubbly.
- Combine: Whisk vegetable broth and sugar into the roux, then stir in the blended tomato mixture.
- Simmer: Stir in heavy cream if desired and cook over medium-low heat for 15 minutes until thick; adjust salt and pepper as needed.
Notes
To make this recipe gluten-free, use all-purpose gluten-free flour. Honey can be used as a substitute for granulated sugar. Store leftovers in an airtight container in the refrigerator for up to 5 days or freeze for up to 2 months.
