Description

Grab that lone spaghetti squash sitting on your counter and break out the barbecue sauce! These BBQ Chicken Spaghetti Squash make low-carb eating fun and delicious!


Ingredients

  • 1 medium spaghetti squash
  • 1/41/2 green bell pepper, diced
  • 1/4 red or white onion, sliced or chopped
  • 12 oz chicken breast, cooked and chopped (2 cups)
  • 1/3 cup favorite bbq sauce
  • 2 oz grated cheese, plus extra to taste
  • jalapeño slices
  • fresh parsley or cilantro
  • extra BBQ sauce for drizzling
  • ranch dressing for drizzling

Instructions

  1. Step: Pre-heat oven to 400 degrees F.
  2. Step: Slice your spaghetti squash in half lengthwise and scoop out the seeds.
  3. Step: Rub the cut side of the squash with a teeny bit of olive oil.
  4. Step: Place inside a baking dish or atop a rimmed baking sheet and roast face-down for about 40 minutes, or until tender and easily pierced with a fork.
  5. Step: For the chicken, mix 2 cups of chopped cooked chicken with 1/3 cup of your favorite barbecue sauce.
  6. Step: Heat a skillet to medium-high heat with a drizzle of oil and sauté your onion and peppers to soften until tender. Add to the BBQ chicken mixture.
  7. Step: Once the squash is roasted, use a fork to separate and fluff the strands.
  8. Step: Remove about 1/2-3/4 of the spaghetti squash strands and toss together with your chicken and veggie mixture and a little bit of your cheese.
  9. Step: Stuff the mixture back into the squash boats and top with the remaining cheese.
  10. Step: Bake at 350 degrees F for approx. 10-15 minutes until golden and bubbly.
  11. Step: Top with an extra drizzle of barbecue sauce, ranch dressing, and any extra toppings desired.

Notes

The recipe yields 4 servings. The squash can be roasted and stored in the fridge for a few days for meal prep. Leftover or rotisserie chicken works perfectly. For a casserole-style dish, scrape out all the squash and combine with ingredients in a large baking dish.
