- 2 cups Carrots, diced
- 2 cups Potatoes, diced

- 1 cup Frozen peas
- 4 cups Chicken broth
- 1 cup Heavy cream
- Salt and pepper to taste
- 1 tsp Thyme
Instructions
- Step: In your crock pot, add the diced chicken breasts. Season with salt, pepper, and thyme.
- Step: Layer the carrots, potatoes, celery, and frozen peas on top of the chicken.
- Step: Pour in the chicken broth and stir to combine the ingredients evenly.
- Step: Cover and cook on low for 6-8 hours or on high for 4-5 hours until the chicken is thoroughly cooked and easy to shred.
- Step: Once cooked, shred the chicken with two forks and return it to the pot.
- Step: Stir in the heavy cream, adjusting seasoning as needed. Cook for an additional 30 minutes to allow flavors to meld.
- Step: Serve hot, either on its own or topped with biscuits or a puff pastry.
Notes
If you prefer a thicker pot pie filling, stir in a cornstarch slurry (1 tablespoon of cornstarch mixed with 2 tablespoons of cold water) during the last 30 minutes of cooking. You can also swap in seasonal vegetables like zucchini or green beans.
