  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Heat the Oil: In a large pot, heat the olive oil over medium heat.
  2. Cook the Onion: Add the diced onion and sauté for about 3-4 minutes until translucent.
  3. Add Garlic: Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Brown the Turkey: Add the ground turkey to the pot, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
  5. Season the Mixture: Sprinkle in the Italian seasoning, salt, and pepper. Stir to combine.
  6. Add Orzo and Broth: Pour in the orzo and chicken broth. Bring the mixture to a boil.
  7. Simmer: Reduce the heat to low, cover, and let it simmer for about 10 minutes or until the orzo is tender.
  8. Add Spinach: Stir in the chopped spinach and cook for an additional 2-3 minutes until wilted.
  9. Taste and Adjust: Check for seasoning and adjust salt and pepper as needed.
  10. Serve: Remove from heat and serve hot, topped with grated Parmesan cheese if desired.

Notes

For a Mediterranean twist, add sun-dried tomatoes and feta cheese. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 2 months.
