- 500g ground beef (or high-quality ground chuck)
- 1 onion, diced
- 3 cloves garlic, minced
- 3 tbsp tomato paste
- 1 L beef broth
- 800g canned chopped tomatoes
- 3 tsp Italian herbs
- 10 lasagna sheets
- 150g crème fraîche
- Parmesan, grated
- Salt and pepper
Instructions
- Step: Heat the oil in a large pot. Crumble in the ground beef, season with salt and pepper, and brown until crispy.
- Step: Add the onion and sauté for about two minutes until translucent while stirring occasionally.
- Step: Stir in the garlic and tomato paste and cook for an additional 30 seconds.
- Step: Add the beef broth, chopped tomatoes, and Italian herbs, then cover and simmer over low heat for 20 minutes.
- Step: Meanwhile, break the lasagna sheets into bite-sized pieces and cook according to package instructions.
- Step: Drain the pasta and add it to the finished soup. Adjust seasoning and serve with a dollop of crème fraîche and a sprinkle of grated Parmesan.
Notes
For a one-pot version, you can cook the pasta directly in the soup, but be aware that the soup will become thicker as the pasta absorbs more liquid. If preparing as a meal prep, keep the pasta and soup separate to ensure the noodles remain firm.
