- 2 cups chicken stock
- 2 cups water
- 1 teaspoon salt

- 3/4 cup shredded white sharp cheddar
- 1 pound large shrimp, peeled and deveined

- 2 tablespoons Cajun seasoning
- 3 green onions, sliced (white and green parts separated)
- 3 cloves garlic, minced
- 1 small red bell pepper, fire-roasted and diced
- 1 teaspoon smoked paprika
- 1/3 cup chicken stock
- 2 tablespoons heavy cream
- 1 teaspoon Worcestershire sauce
- 1 tablespoon fresh lemon juice
Instructions
- Step: Boil the 2 cups chicken stock and 2 cups water in a large saucepan. Season with salt.
- Step: Slowly whisk in the grits to avoid clumps. Cook on medium-low heat, whisking frequently for 5-7 minutes or until creamy.
- Step: Turn off the heat. Stir in 2 tablespoons of butter and the white cheddar cheese until melted. Keep warm.
- Step: Heat 1 tablespoon of sunflower oil in a large skillet over medium-high heat. Place shrimp in the pan and sprinkle with Cajun seasoning.
- Step: Sear the shrimp for 2 minutes per side until pink and cooked through. Remove shrimp from the pan and set aside.
- Step: Add the remaining 1 tablespoon of butter to the skillet. Sauté the white parts of the green onion for 30 seconds.
- Step: Add minced garlic and sauté for a few seconds.
- Step: Add the fire-roasted red bell peppers and cook for 1 minute.
- Step: Stir in the smoked paprika and cook for 20 seconds.
- Step: Pour in 1/3 cup chicken stock, scraping the bottom of the pan to deglaze.
- Step: Stir in the heavy cream and Worcestershire sauce, simmering until slightly thickened.
- Step: Reduce heat to low, add the cooked shrimp and lemon juice, and toss to coat in the sauce.
- Step: Serve the shrimp and gravy over a bowl of warm, cheesy grits. Garnish with the green onion tops.
