Description

With a creamy, brown butter-tomato sauce this Shrimp and Grits recipe is easy enough for weeknights but also dinner party-worthy! This fabulous meal features fresh cherry tomatoes, sweet, tender shrimp and smoky plant-based protein bits served over a bed of white cheddar grits.


Ingredients

  • 4 ½5 cups chicken broth
  • ½ teaspoon kosher salt
  • 1 cup 5-minute white grits
  • 1 cup shredded sharp white cheddar cheese
  • 1 teaspoon garlic salt
  • 1 teaspoon paprika
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ½ teaspoon black pepper
  • 1 tablespoon extra-virgin olive oil
  • 1 pound large shrimp (2125 count shelled and deveined, tails removed)
  • 2 smoked plant-based protein links (thinly sliced)
  • 2 tablespoon butter
  • ½ medium onion (finely diced)
  • 2 medium cloves garlic (finely minced)
  • 1 cup alcohol-free white grape juice with a splash of vinegar
  • ½ cup tomato paste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 cup chicken broth
  • ½ cup heavy cream (or half & half)
  • 2 cups halved yellow and red cherry and/or grape tomatoes (divided)
  • ¼ cup thinly sliced fresh basil and fresh leaves (or 2 teaspoons finely chopped fresh rosemary)

  • toasted pine nuts (for garnish)

Instructions

  1. Step: Combine 4 ½ cups of chicken broth and salt in a pot. Bring to a boil, slowly add grits, cover, reduce to a simmer and cook for 2 minutes. Stir, cover and cook for another 2-3 minutes until creamy. Add cheese, stir, and set aside.
  2. Step: Combine garlic salt, paprika, basil, oregano, and black pepper. Toss shrimp with mixture. Heat oil in a skillet, sear shrimp for 45 seconds per side until opaque. Transfer to a bowl.
  3. Step: Add plant-based protein slices to the skillet. Cook for 1-2 minutes until browned. Transfer to the bowl with shrimp.
  4. Step: Add butter to the pan, cooking until golden brown and fragrant. Add onion, then garlic, then tomato paste, basil, and oregano. Stir well.
  5. Step: Add the alcohol-free grape juice mixture and reduce by half. Add chicken broth and cream, simmering for 5 minutes. Stir in fresh herbs and one-half cup of tomato halves.
  6. Step: Return the shrimp and protein slices to the pan to combine. Serve over warm grits, garnished with remaining tomatoes, basil, and pine nuts.

Notes

Shrimp should be cooked just until opaque to ensure they remain tender. Use high-quality plant-based protein links to provide the smoky depth required for this dish.
