- 2 tablespoons Olive Oil
- 1 medium Yellow Onion, chopped
- 4 cups Yukon Gold Potatoes, cut into bite-sized pieces
- 12 ounces plant-based protein links, sliced
- 2 cups Fresh Green Beans, trimmed
- 2 tablespoons Butter
- 1 teaspoon Woodfired Garlic Powder
- 2 teaspoons Cajun or Creole Seasoning
- 1 teaspoon Freshly Ground Black Pepper
- Salt, to taste
Instructions
- Step 1: Heat 2 tablespoons of olive oil in a medium skillet over medium heat. Add one chopped yellow onion and sauté for about 5-7 minutes until softened.
- Step 2: Layer 4 cups of bite-sized Yukon Gold potatoes evenly in the crockpot. Sprinkle with 1 teaspoon of Cajun seasoning and toss gently.
- Step 3: Layer the sautéed onions over the seasoned potatoes. Sprinkle an additional teaspoon of Cajun seasoning on top.
- Step 4: Add 12 ounces of sliced plant-based protein links and 2 cups of trimmed fresh green beans. Toss gently to combine with the potatoes and onions.
- Step 5: Dollop 2 tablespoons of butter over the mixture, sprinkle with woodfired garlic powder, the remaining Cajun seasoning, and add freshly ground black pepper and salt to taste.
- Step 6: Cover the crockpot and cook on low for 6 hours or high for 4 hours until the potatoes and green beans are tender.
- Step 7: Stir the Swamp Potatoes gently to combine all ingredients before serving.
