Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 pound large shrimp (peeled and deveined)
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon crushed red pepper flakes
  • 2 tablespoons butter
  • 2 shallots (thinly sliced)
  • 5 cloves garlic (thinly sliced)
  • 1/2 cup vegetable broth
  • 2 tablespoons lemon juice
  • 1/2 pound angel hair pasta
  • Optional: chopped parsley and lemon wedges for serving

Instructions

  1. Step: Start heating a large pot of very salty water over high heat.
  2. Step: Heat the olive oil in a large skillet or pot over medium heat.
  3. Step: Once the oil is hot, add the shrimp, and toss to coat the shrimp in the oil.
  4. Step: Sprinkle the shrimp with half the salt, black pepper, paprika, and red pepper flakes. Cook the shrimp for 3 to 4 minutes, stirring occasionally till they are pink and cooked through. Remove the shrimp from the pot and set aside for later.
  5. Step: Place the same skillet back on the stovetop and increase heat to medium-high. Add the butter and allow it to melt. Once bubbling, add the shallots and allow them to sauté for 3 minutes. Add the garlic and the remaining spices to the skillet. Stir continuously for 30 seconds.
  6. Step: Add the vegetable broth to the skillet and bring to a gentle boil. Reduce heat and allow to simmer for 5 minutes.
  7. Step: Cook the angel hair pasta in the large pot of boiling water according to the package directions. Save 1/2 cup of the pasta cooking water, then drain the pasta.
  8. Step: Add the pasta water to the skillet and allow the sauce to simmer for an additional 2 to 3 minutes to reduce slightly.
  9. Step: Add the lemon juice and the shrimp to the skillet. Toss to coat the shrimp in the sauce.
  10. Step: Turn off the heat and add the cooked angel hair pasta. Toss to coat.
  11. Step: Serve the pasta immediately. Top with optional chopped fresh herbs and lemon wedges.

Notes

This recipe is best served fresh. Leftover pasta will save for up to 3 days in the refrigerator. Reheat with a splash of water to help loosen the noodles.
