Ingredients

Scale
  • 2 lbs smoked savory links (sliced)
  • 2 lbs baby potatoes (halved)
  • 2 medium onions (chopped)
  • 3 cloves garlic (minced)
  • 12 oz fresh green beans
  • 10 oz can diced tomatoes and green chilies (with liquid)
  • 1/2 stick butter
  • 1 tsp Italian seasoning
  • 1/2 tsp smoked paprika
  • salt and pepper (to taste)

Instructions

  1. Step: Add savory links, baby potatoes, onions, garlic, and green beans to the crockpot.
  2. Step: Pour in the diced tomatoes and green chilies (liquid included), then top with butter and seasonings.
  3. Step: Cover and cook for 6–8 hours on LOW or 3–4 hours on HIGH, until the potatoes are fork-tender.

Notes

Use waxy potatoes like baby golds or reds to avoid a mushy texture. For extra color, stir in fresh parsley before serving. Storage: Keep leftovers in an airtight container for up to 4 days.
