Description

Tender, juicy Crockpot BBQ Pulled Chicken slow-cooked with onions, garlic, and a simple spice rub, then tossed with sweet and smoky barbecue sauce. Perfect for sandwiches, sliders, tacos, nachos, and baked potatoes.


Ingredients

  • 2 slices of onion (1/2 inch thick)
  • 12 large cloves garlic, peeled and whole
  • 1/2 cup chicken broth
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon brown sugar, packed
  • 4 boneless, skinless chicken breasts (68 ounces each)
  • 2 cups prepared barbecue sauce

Instructions

  1. Step 1: Add the sliced onions and garlic to the bottom of a slow cooker and pour in chicken broth.
  2. Step 2: In a small bowl, mix together the chili powder, smoked paprika, garlic powder, onion powder, black pepper, salt, and brown sugar until combined.
  3. Step 3: Pat chicken breasts with paper towels to remove excess moisture.
  4. Step 4: Generously sprinkle both sides of the chicken with the spice mixture and gently press it into the meat.
  5. Step 5: Lay chicken in a single layer over onions, cover, and cook on high for 4-6 hours or low for 8-10 hours until tender. Remove chicken to a plate.
  6. Step 6: Strain the onion-liquid mixture using a sieve, roughly chop the onions, return them to the crockpot, and discard the liquid.
  7. Step 7: Shred the chicken breasts into bite-sized pieces using two forks and return them to the crockpot.
  8. Step 8: Stir in the prepared barbecue sauce, cover, and heat on high until warmed through.

Notes

Use similarly sized chicken breasts to ensure even cooking. To prevent dryness, cook chicken only until tender (165°F). Shred the chicken while warm to better absorb the barbecue sauce.
