Ingredients

  • 2 lbs. boneless, skinless chicken breast
  • 12 oz gluten-free penne pasta
  • 1 cup shredded mozzarella cheese
  • 24 oz marinara sauce
  • 15 oz alfredo sauce
  • 1/2 tsp pepper
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes
  • 1 tbsp minced garlic
  • Parmesan cheese
  • finely chopped fresh basil

Instructions

  1. Layer in the crockpot: Place the chicken breasts at the bottom of the crockpot.
  2. Pour in the sauces: Pour the marinara sauce and alfredo sauce over the chicken. Make sure the chicken is well-coated with the sauces.
  3. Season: Add salt, pepper, onion powder, Italian seasoning, minced garlic, and red pepper flakes to crock pot. Gently stir.
  4. Cook: Cover the crockpot and cook on low for 4-6 hours or until the chicken is tender and easily shreds with a fork.
  5. Shred the chicken: Once the chicken is cooked, remove from cooker to shred. Use two forks to shred it. Add the shredded chicken back to the crockpot and stir the shredded chicken to combine it with the creamy sauce.
  6. Cook the pasta: Cook the pasta according to the package instructions until al dente. Drain and rinse pasta in sink. Add to cooker with the chicken and sauce. Mix well (but be gentle with the pasta).
  7. Add mozzarella: Sprinkle the shredded mozzarella cheese over the chicken sauce mixture. Cover the crockpot again and let it cook for an additional 15-20 minutes or until the cheese is melted and bubbly.
  8. Serve: Serve the creamy chicken over the cooked pasta. Garnish with Parmesan cheese and chopped basil.

Notes

You can either mix the al-dente pasta into the Crock Pot about 20 minutes before serving for a casserole style, or serve the sauce over naked pasta to prevent the pasta from getting too soft when reheating leftovers.
