Description
A simple & delicious crockpot chicken soup brimming with flavorful chicken, fresh Mexican herbs & spices & zesty lime juice, topped with crispy tortilla strips.
Ingredients

- 3 boneless skinless chicken breasts
- 2 (32 oz.) cartons of chicken broth
- 1½ cup green onion, sliced (green & white parts)
- 4 roma tomatoes, diced
- 3 garlic cloves, minced
- 2 jalapeños, deseeded & minced
- 1 tsp cumin
- ⅓ cup fresh lime juice
- ⅓ cup cilantro, chopped
- Salt & black pepper, to taste
- 3–4 large avocados, diced
- Tortilla strips, chopped cilantro, lime wedges, sliced green onion for toppings
Instructions
- Cook the soup: Place the chicken breasts in the bottom of a crockpot and generously season with salt and black pepper. Add the chicken broth, sliced green onion, tomatoes, garlic, jalapeño & cumin. Cover the crockpot and cook on low for 5-7 hours.
- Shred the chicken: Remove the chicken breasts from the pot and shred them using two large forks before adding it back to the crockpot.
- Finishing touches: Right before serving, add the lime juice and cilantro to the soup and give it a good stir.
- Serve: Serve each individual bowl with diced avocado, tortilla strips and extra chopped cilantro.
Notes
You can replace the raw chicken with 3-4 cups of shredded chicken instead.
