Make the easiest Slow Cooker Chicken Tacos with just 10 minutes of prep for tender, flavorful shredded chicken. Perfect for busy weeknights.

- 1.5 lbs boneless, skinless chicken breasts or thighs
- 1 cup chunky salsa
- 1 packet taco seasoning
- 0.25 cup chicken broth or water
- 2 tbsp fresh lime juice
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 0.5 tsp smoked paprika
- corn or flour tortillas, shredded lettuce, diced tomatoes, shredded cheese, sour cream, cilantro, avocado for serving
Instructions
- Step: Cut chicken into smaller chunks if desired and place in the bottom of the slow cooker.
- Step: In a small bowl, stir together the salsa, taco seasoning, chicken broth, lime juice, minced garlic, cumin, and smoked paprika. Pour evenly over the chicken.
- Step: Secure the lid. Cook on LOW for 4-5 hours or HIGH for 2-3 hours for breasts; or LOW for 5-6 hours or HIGH for 3-4 hours for thighs.
- Step: Shred the tender chicken directly in the slow cooker using two forks and stir well.
- Step: Leave the lid off and let the chicken sit on the WARM setting for 15-20 minutes to thicken.
- Step: Warm the tortillas using a skillet, gas flame, or microwave.
- Step: Assemble tacos with the chicken and desired toppings.
Notes
Store in an airtight container for 3-4 days. Freeze for up to 3 months. If the filling seems too watery, mix 1 tbsp cornstarch with 2 tbsp cold water and cook on HIGH for 15-20 minutes to thicken.
