- 6 medium potatoes, peeled and diced
- 8 slices smoked turkey strips, diced
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 small onion, diced
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper, to taste
Instructions
- Step: Dice potatoes and place in a colander. Rinse under cold water and drain well.
- Step: In a large skillet, cook turkey strips until crispy. Remove with a slotted spoon and set aside.
- Step: Add diced onion to the skillet and cook until translucent. Stir in diced potatoes, garlic powder, paprika, salt, and pepper. Cook for 5 minutes, stirring occasionally.
- Step: Transfer the potato mixture to your slow cooker. Stir in sour cream and half of the shredded cheese.
- Step: Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Step: Once done, mash the potatoes slightly with a potato masher. Top with remaining cheese and crispy turkey strips. Let it rest for 10 minutes before serving.
Notes
Chef tip: For a crispy top, broil the casserole for 2-3 minutes after adding the cheese. Substitute potatoes with sweet potatoes for a sweeter flavor.
