Description
Simple slow cooker chicken tacos are perfect for Taco Tuesday, this is an easy weeknight meal!
Ingredients

- 4 boneless chicken breasts (6–8 ounces each)
- 1 cup chunky salsa
- 15 ounces canned black beans (drained and rinsed)
- 2 cups frozen sliced bell peppers
- 1 packet taco seasoning
- Crunchy corn taco shells or flour tortillas, shredded lettuce, salsa and/or sour cream for serving
Instructions
- Step: Spray a large crockpot with nonstick spray.
- Step: Add the chicken to the bottom of the crockpot. Add black beans and peppers.
- Step: Pour salsa over the chicken.
- Step: Sprinkle with taco seasoning.
- Step: Set on low, seal – cook for 8 hours.
- Step: Remove chicken breasts, shred with two forks, return to crockpot, mix well and serve.
Notes
Be sure to spray your slow cooker well with nonstick cooking spray or use a slow cooker liner for even easier cleanup. You can use a hand mixer to shred the chicken quickly.
