  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped, for garnish

Instructions

  1. Step: Season the chicken breasts with salt, pepper, and paprika, then drizzle with olive oil.
  2. Step: Place the halved baby potatoes in the bottom of the crockpot to create a base layer.
  3. Step: Arrange the seasoned chicken breasts on top of the potatoes.
  4. Step: In a separate bowl, combine minced garlic, chicken broth, Italian seasoning, and half of the grated Parmesan cheese.
  5. Step: Pour the garlic broth mixture over the chicken and potatoes, ensuring everything is well-coated.
  6. Step: Cover the crockpot and cook on low for 4-6 hours or high for 2-3 hours, until the chicken is tender.
  7. Step: Approximately 15 minutes before serving, sprinkle the remaining Parmesan cheese on top, cover, and let it melt.
  8. Step: Garnish with freshly chopped parsley.
  9. Step: Serve the chicken and potatoes, drizzling the creamy garlic sauce over the top.
