Description

This Slow Cooker Honey Garlic Chicken is an easy dump and go slow cooker recipe. It’s a delicious quick dinner idea!


Ingredients

  • ⅓ cup honey
  • ⅓ cup low sodium soy sauce
  • 2 tablespoons tomato paste
  • 1 tablespoon apple cider vinegar
  • 4 cloves garlic (minced)
  • ¼ teaspoon black pepper
  • pinch red pepper flakes (optional)
  • 2 pounds boneless, skinless chicken breasts (or boneless, skinless chicken thighs)
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • cooked white or brown rice and chopped green onions or cilantro (for serving)

Instructions

  1. Step 1: In a medium bowl, combine honey, soy sauce, tomato paste, apple cider vinegar, garlic, black pepper and red pepper flakes. Whisk until well combined.
  2. Step 2: Place the chicken in the slow cooker. Pour the sauce over the chicken.
  3. Step 3: Cover and cook on low for 4-5 hours or high for 2-3 hours, or until chicken is cooked through to at least 165° F and tender. If using boneless chicken thighs, cook on low for 4-6 hours or high for 2-4 hours.
  4. Step 4: Remove the chicken to a clean bowl or cutting board and let it rest for a few minutes.
  5. Step 5: Meanwhile, in a small bowl, stir together the 1 tablespoon cornstarch and 1 tablespoon water. Stir this cornstarch slurry into the sauce in the slow cooker. Cover and cook on high for 10-20 minutes, until the sauce thickens slightly.
  6. Step 6: Shred the chicken and return it to the sauce in the slow cooker.
  7. Step 7: Serve chicken and sauce over rice, garnished with chopped green onions or cilantro.

Notes

Store leftover chicken in an airtight container in the refrigerator for up to 3 days. Reheat chicken and sauce in a saucepan on the stove over medium-low heat, or reheat in the microwave.
