Slow Cooker Savory Beef and Potato Pie

Description

Crockpot Shepherd’s Pie is made in your slow cooker and is an easy way to enjoy a classic comfort food casserole. Ground beef is simmered with a tomato paste sauce, mushrooms, peas, and carrots topped with cheesy mashed potatoes.


Ingredients

  • 1/2 pound ground beef
  • 1 teaspoon jarred minced garlic
  • 4 ounce can sliced mushrooms (drained)
  • 1/4 cup beef broth
  • 2 Tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 large russet potato
  • 1/4 cup milk
  • 2 Tablespoons butter (melted)
  • 1/2 cup shredded cheddar cheese
  • Salt and freshly ground black pepper (to taste)
  • 1 Tablespoon all-purpose flour
  • 2 Tablespoon water
  • 1 cup frozen peas and carrots (thawed)

Instructions

  1. Step 1: Place the uncooked ground meat in an even layer in the bottom of a 4-quart slow cooker.
  2. Step 2: Top with the minced garlic and mushrooms.
  3. Step 3: In a medium bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, oregano, garlic powder, and onion powder.
  4. Step 4: Pour the broth mixture over the contents of the slow cooker and stir to combine.
  5. Step 5: Cover the slow cooker and cook on low for 4-6 hours or on high for 2-4 hours, until the beef is cooked through.
  6. Step 6: Peel and cut the potatoes into 2-inch cubes.
  7. Step 7: Place the potatoes in a medium saucepan and cover them with 2 inches of water and a sprinkle of salt. Bring the potatoes to a boil over medium-high heat for about 15 minutes until fork tender.
  8. Step 8: Drain the potatoes and place them in a bowl.
  9. Step 9: Add the milk, butter, salt and pepper to taste.
  10. Step 10: Gently mash the potatoes with a handheld potato masher or mixer until just combined.
  11. Step 11: Mix the cheddar into the mashed potatoes and set aside.
  12. Step 12: Mix the flour and water until smooth in a small bowl, then slowly stir the mixture into the slow cooker.
  13. Step 13: Add the peas and carrots.
  14. Step 14: Spread the mashed potatoes in an even layer on top of the meat mixture.
  15. Step 15: Cover the slow cooker and cook on high for 30 more minutes, until the gravy has thickened and the mashed potatoes are heated through.

Notes

You can use ground turkey, ground lamb, ground chicken, or cubed chuck roast in this recipe. Instead of making homemade mashed potatoes, you can use stovetop instant potatoes. Store in the fridge for five days or in the freezer for a couple of months.
