- 2 lbs boneless, skinless chicken thighs or breasts
- 1/4 cup olive oil
- 2 canned chipotle peppers
- 2 tablespoons adobo sauce
- 4 garlic cloves
- 1 shallot
- 1 1/2 tablespoons cumin
- 1 tablespoon coriander
- 2 teaspoons chili powder
- 1 teaspoon dried oregano
- 2 teaspoons salt
- Lime juice for garnish
- Cilantro for garnish
Instructions
- Step: Preheat grill to medium-high.
- Step: Process marinade ingredients in a food processor into a paste. Place chicken and marinade in a ziplock bag and massage well to coat. Marinate for 20 minutes or up to 3 days.
- Step: Grill each side of chicken for 6-7 minutes until grill marks appear. Lower heat and move chicken to the cooler side of the grill until internal temperature reaches 165F.
- Step: Let chicken rest for 5-10 minutes before serving. Squeeze with lime and sprinkle with cilantro.
Notes
The chicken can be marinated for 20 minutes up to 3 days for deeper flavor.
