Description

Grilled Chipotle Chicken is a flavorful summer dinner perfect for hot evenings, featuring lean protein and bold spices.


Ingredients

  • 2 lbs boneless, skinless chicken thighs or breasts
  • 1/4 cup olive oil
  • 2 canned chipotle peppers
  • 2 tablespoons adobo sauce
  • 4 garlic cloves
  • 1 shallot
  • 1 1/2 tablespoons cumin
  • 1 tablespoon coriander
  • 2 teaspoons chili powder
  • 1 teaspoon dried oregano
  • 2 teaspoons salt
  • Lime juice for garnish
  • Cilantro for garnish

Instructions

  1. Step: Preheat grill to medium-high.
  2. Step: Process marinade ingredients in a food processor into a paste. Place chicken and marinade in a ziplock bag and massage well to coat. Marinate for 20 minutes or up to 3 days.
  3. Step: Grill each side of chicken for 6-7 minutes until grill marks appear. Lower heat and move chicken to the cooler side of the grill until internal temperature reaches 165F.
  4. Step: Let chicken rest for 5-10 minutes before serving. Squeeze with lime and sprinkle with cilantro.

Notes

The chicken can be marinated for 20 minutes up to 3 days for deeper flavor.
