  • 1/2 cup brown sugar, packed
  • 1/2 cup ketchup
  • 1 cup pineapple juice
  • 2/3 cup soy sauce
  • 2 tbsp Worcestershire sauce
  • 2 tbsp apple cider vinegar
  • 1 tsp ground ginger
  • 6 garlic cloves, minced
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1 tsp sriracha
  • 1 tbsp toasted sesame oil
  • vegetable oil, for greasing the grill
  • 1 large pineapple, cut into 1-inch thick rounds
  • 1/2 cup green onions, chopped

Instructions

  1. Step 1: Combine brown sugar, ketchup, pineapple juice, soy sauce, Worcestershire sauce, apple cider vinegar, ground ginger, minced garlic, paprika, black pepper, sriracha, and toasted sesame oil in a bowl or bag; reserve 1/2 cup of marinade as a glaze.
  2. Step 2: Add chicken thighs to the marinade, refrigerate for 4 to 6 hours or overnight, and let sit at room temperature for 20 to 30 minutes before grilling.
  3. Step 3: Preheat grill to 400–425°F, oil the grates with vegetable oil, and prepare the pineapple rounds.
  4. Step 4: Grill chicken undisturbed for 6 minutes to sear, then flip and cook for 3 minutes on the second side.
  5. Step 5: Flip chicken again, brush generously with reserved glaze, cook for 1 to 2 minutes, flip and brush again, and cook until the internal temperature reaches 165°F.
  6. Step 6: Transfer chicken to a plate to rest for 10 minutes, then grill pineapple rounds for 3 to 4 minutes per side.
  7. Step 7: Arrange chicken and grilled pineapple on a platter and garnish with chopped green onions.

Notes

Use canned pineapple juice rather than fresh to prevent the chicken from becoming mushy. Allow the chicken to rest for 10 minutes after grilling to ensure it remains moist.
