Instructions

  1. Prepare Simple Syrup: In a medium saucepan, combine the granulated sugar and water. Heat over medium-high heat, stirring constantly until the sugar is completely dissolved. Bring to a gentle boil, then reduce heat to low and simmer for 5 minutes without stirring. Remove from heat and set aside to cool slightly.
  2. Puree Mangoes: Place the peeled and cubed mangoes in a blender and process until completely smooth. For an extra-smooth syrup, press the purée through a fine-mesh sieve into a clean bowl, discarding fibrous pulp.
  3. Infuse Syrup: Return the simple syrup to the saucepan over low heat. Stir in the prepared mango purée, ground green cardamom, and fresh lime juice. Gently simmer the mixture for 10-15 minutes, stirring occasionally, until the syrup thickens slightly and coats the back of a spoon.
  4. Cool and Store: Remove the spiced mango syrup from the heat and let it cool completely to room temperature. Transfer the cooled syrup to a clean, airtight glass bottle or jar. Store refrigerated for up to 2 weeks for best quality and freshness.
  5. Serve with Shaved Ice: Fill a snow cone cup or bowl with freshly shaved ice. Generously drizzle the syrup over the ice. Finish with a light dusting of additional ground cardamom and scatter fresh mango cubes on top for garnish.

Notes

Store the finished syrup in an airtight container in the refrigerator for up to 2 weeks. For the smoothest consistency, pass the mango puree through a fine-mesh sieve before adding it to the simple syrup. Use fresh ground cardamom for the best flavor.
