Description

Crispy spicy fried chicken recipe that’s full of cajun flavor and seasoned to perfection. A buttermilk brine ensures a juicy, tender piece of fried chicken every time!


Ingredients

  • 1/2 gallon buttermilk
  • 4 cloves garlic, crushed
  • 1/2 white onion, sliced
  • 1/2 cup hot sauce
  • 3 Tablespoons salt
  • 3 lbs fresh whole chicken, cut up
  • 1 Tablespoon granulated sugar
  • 1 Tablespoon salt
  • 1 Tablespoon black pepper
  • 1 Tablespoon onion powder
  • 1 Tablespoon cayenne
  • 1 Tablespoon cajun seasoning
  • 1 Tablespoon paprika
  • 1 Tablespoon garlic powder
  • 1 Tablespoon poultry seasoning
  • 1 teaspoon celery salt
  • 1 teaspoon smoked salt
  • 1/2 tablespoon chili powder
  • 3 cups self-rising flour
  • 3 eggs
  • 1/4 cup water
  • 1/2 cup hot sauce
  • 1 teaspoon garlic powder
  • Peanut oil or shortening for frying
  • Cajun seasoning for sprinkling

Instructions

  1. Step: In a large bowl, lined with a brining or roasting bag, combine buttermilk, garlic, onion slices, 1/2 cup hot sauce and salt.
  2. Step: Add chicken and tie the bag close so that the chicken is completely submerged in the brine.
  3. Step: Refrigerate for up to 3 hours.
  4. Step: Pour off the brine and shake off excess brine from chicken.
  5. Step: Combine the seasoning blend and adjust if needed.
  6. Step: Place chicken on a baking tray and sprinkle on up to half of the seasoning mixture generously over the chicken on both sides.
  7. Step: Mix the rest of the spices into the flour gently.
  8. Step: Place the flour mixture into a large paper bag and add chicken to the bag.
  9. Step: Close the bag tightly and shake to coat the chicken, then remove and shake off excess flour.
  10. Step: In a large dish, combine eggs, water, hot sauce and garlic powder.
  11. Step: Dip each piece of coated chicken into the egg mixture and shake off the excess.
  12. Step: Place chicken back into the paper bag and shake to coat one last time.
  13. Step: Add oil to a deep skillet and heat to 350 degrees.
  14. Step: Add chicken to the skillet and cook until golden, frying dark and white meats separately.
  15. Step: Remove chicken and place on a plate lined with paper towels to drain.
  16. Step: Sprinkle with cajun seasoning immediately and serve hot with additional hot sauce.

Notes

Cooking time for chicken: White meat typically takes 16-20 minutes, dark meat 20-30 minutes. Cooking times will vary based on the size of the chicken pieces.
